It’s made of iron. It is best suited for shallow frying or to make gravies. Food cooks well and uniformly in this Kadai. Food cooked in iron vessels contain trace amounts of iron it. Once we receive the Kadai, we thoroughly clean them and dry with a towel. Then cooking oil such as groundnut oil or sesame oil is applied all over the vessel and it left to dry in the sun for about 5 to 6 hours. The process is repeated for 2-3 weeks to obtain a seasoned Kadai that is ready to use in your kitchen.
